Most of the time I make plain rice to serve with meals like curry, chili, or stir fry, but if I'm making rice as a side dish, this is my favourite way to make it.
Ingredients:
1.5 cups white rice
1/2 cup strained tomatoes
1/2 cup diced onion
1 tbsp minced garlic
1/2 tbsp onion salt
3 cups water
1 tbsp olive oil or ghee
sliced green onion to garnish (optional)
Instructions:
In a large pot over medium heat saute the onion with oil until they are soft. Add the garlic and saute another minute or two stirring frequently being careful not to burn the garlic.
Stir in the strained tomatoes and onion salt.
Add the water and turn the heat to high until the water comes to a boil.
Turn the heat to low, stir in the rice, put a lid on the pot, and let simmer for 20 minutes.
Remove from heat, and let stand with lid on for 10 minutes.
Stir, taste, and add more onion salt if needed.
Serves 4-6
