I created this recipe for my baby because I wanted a simple snack to give him but a lot of the pre-made baby snacks at the store contain added sugars (yes! Check the ingredients lists). Although I created the recipe for my baby, I also like these muffins and they are a great option for anyone trying to reduce their refined carb and sugar intake.
Ingredients
1 cup almond flour
A heaping 1/2 cup of unsweetened applesauce (or mashed very ripe banana for banana muffins)
1 egg
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
Pinch of salt (optional)
Coconut oil for greasing
Instructions
Preheat oven to 350 degrees.
Grease a mini muffin tin With coconut oil.
In a large bowl, Mix the almond flour with cinnamon, baking powder, baking soda and salt.
In a separate bowl mix the eggs and applesauce then add to the almond flour mixture. Stir until well combined.
Pour batter evenly to make about 15 mini muffins.
Bake for about 18 minutes or until the tops are golden brown and a toothpick inserted in the middle comes out clean.
Note: for regular muffins, double the recipe and bake longer, about 25-30 minutes.
