For this recipe, you can actually use any ground meat you like. It is loaded with vegetables, so it's a great way to sneak some extra veggies into your kids.
Ingredients:
2 lbs ground meat
230-gram carton of sliced mushrooms, roughly chopped
2 large handfuls of spinach
2 cups of diced onion
1/2 tbsp minced garlic
2 eggs, whisked
1 tsp salt
1/2 tsp pepper
Olive oil for cooking
Optional:
A handful of chopped fresh parsley
Tomato marinara sauce for serving
Instructions:
Preheat the oven to 375 degrees.
In a large pan over medium heat, add a drizzle of olive oil and saute the onions and mushrooms until the onions are soft and translucent. Add the spinach and garlic and saute until the spinach wilts.
In a large bowl mix together the ground meat, eggs, salt, pepper, and parsley. Mix in the sauteed vegetables.
Pack into a greased or lined loaf pan and cook for 60-70 minutes. Top with tomato marinara sauce to serve.
