Chocolate Mint Energy Bites
These bites are a great way to satisfy a sweet tooth or a chocolate craving while avoiding ultra processed treats. They are gluten-free, grain-free, dairy-free, vegan and Paleo friendly.
1 cup pitted dates
1 cup unsalted nuts (almonds, walnuts, pecans, or cashews work well)
1/4 cup cocoa powder
1 tbsp chia seeds or ground flax seeds
1/4 tsp peppermint extract
1/8 tsp sea salt
1/4 cup semi-sweet chocolate chips (make sure they are dairy-free if you want dairy-free or vegan bites)
Place all ingredients except for the chocolate chips in a food processor. Pulse until everything is broken down and well combined.
Transfer to a medium size bowl and mix in the chocolate chips.
Use your hands to roll into ~15 even sized balls.
Store in an airtight container in the fridge or freezer.
Yields ~15 balls
