Chocolate Peanut Butter Energy Bites

These energy bites are a favourite among clients. They are a healthy treat to satisfy a sweet tooth or the perfect grab n' go snack for your mid afternoon energy slump.



Ingredients:

1 cup of pitted dates

1/2 cup unsweetened shredded coconut

1/3 cup natural nut butter (I use peanut butter but any unsweetened natural nut butter will work)

1/4 cup ground flax seeds

1/4 cup of chocolate chips (I use Enjoy life dairy free mini chocolate chips)


Instructions:

1. Add the dates to a food processor and pulse for a few seconds to start breaking them down.

2. Next, add the coconut, peanut butter, and flax. Pulse for about a minute or until everything is well combined. You might have to stop the processor once or twice to break things up if the mixture clumps up and gets stuck.

3. Add the chocolate chips and either stir in or pulse for a few seconds just until the chips are mixed in, but not broken apart.

4. Grab about a tablespoon or so of the mixture and use your hands to shape into balls. Place in the fridge for at least one hour to set. Store in fridge or freezer.


Yeild: ~15 balls
