Dark Chocolate PB2 Fudge Bites

This treat recipe is only 3 ingredients and requires no baking! I use PB2 in this recipe which is defatted peanut butter powder. I don't usually count calories and I don't promote a low fat lifestyle but I wanted to see if I could make some lite treat recipes without losing out on flavour. Despite being lower in fat these fudge bites are very rich and at under 50 kcal per bite, as opposed to over 100 kcal per bite if I used regular peanut butter, why not?



Ingredients:

1 cup of PB2

1/2 cup dairy-free semi-sweet chocolate chips

1/4 tsp of salt

optional: coconut oil for greasing


Instructions:

  1. Line a loaf pan with parchment paper and lightly grease with coconut oil (without the oil these squares may still stick a little bit to the parchment paper).

  2. Place the chocolate chips in a bowl and microwave for about 2 minutes to soften.

  3. In a separate bowl combine PB2 powder and salt. Add 1/2 cup of water and stir to make a paste.

  4. Combine the PB2 with the chocolate and pour mixture into the loaf pan spreading it as evenly as possible.

  5. Place in the freezer to chill for about 30 minutes before cutting into squares. I cut mine into 21 squares. Store in the fridge or freezer.

Yield: 21 squares
