Oatmeal Raisin Cookies

This recipe was completely unplanned. My boyfriend wanted to bake me something for Valentine's day, and he doesn't volunteer to bake or cook very often so I grabbed whatever ingredients I had on hand to make some cookies and he whipped up these oatmeal raisin cookies (with a bit of direction from me). I wasn't sure they would turn out, but they are delicious. I made them one more time before posting this just to make sure the first time wasn't a fluke.



Ingredients:

1 1/2 cups oat flour (you can make oat flour by blending dry oats)

3 cups oats

1 tsp cinnamon

1 tsp salt

1 cup coconut sugar

1/2 cup cane sugar

1 cup ghee or vegan butter, softened

1/2 cup applesauce

1/2 cup raisins (use chocolate chips if you don't like raisins)


Instructions:

  1. Preheat oven to 350 degrees.

  2. Line 2 baking sheets with parchment paper

  3. In a large bowl combine the oat flour, oats, cinnamon, and salt.

  4. In a separate bowl combine the sugar, ghee, and applesauce.

  5. Pour the sugar mixture into the flour mixture and stir well to combine (or use your hands)

  6. Mix in the raisins.

  7. Use your hands to roll the dough into 16 balls and space them evenly on the baking sheets. Gently press down the top of each ball so that the cookies are not as thick and cook more evenly.

  8. Bake for approximately 15 minutes.

  9. Remove from oven and let cool completely before removing from baking sheet.

Yield: 16 cookies
