This is a simple Puerto Rican Beef recipe that's great for meal prepping or a quick dinner to whip up. This recipe is gluten-free, dairy-free, paleo and keto-friendly.
Ingredients:
1.5 lbs ground beef
1 tbsp olive oil
500 g bag of frozen onion and bell pepper slices
2 tsp turmeric
2 tsp cumin
1/2 tbsp coriander
1/2 tbsp oregano
1 tsp salt, or to taste
Ground black pepper to taste
Serving options:
Cauliflower rice
Rice
Mashed sweet potato
Mashed potato
Sliced avocado
Olives
Note: Olives, avocado and cauliflower rice would all generally be keto-friendly. Sweet potato, olives, and avocado would generally be paleo-friendly.
Instructions:
1. In a pan over medium-high heat add the olive oil and ground beef. Use a spatula to break apart the beef.
2. Saute the beef continuing to break up until it is about half cooked (5-10 minutes), then add the bell peppers and onion. Break up the onions and peppers if they are stuck together and stir to combine with the beef.
3. Add all the spices and saute until the onions and peppers are tender and the beef is fully browned.
4. Serve with options of choice.
