This recipe is super simple with just 4 ingredients. It is a "healthier option" peanut butter cookie as it uses natural peanut butter, no flour, and less sugar than a traditional peanut butter cookie recipe.
Ingredients:
1 cup natural peanut butter (just peanuts, no sugar or other ingredients added!), chilled
1/2 cup sugar
1/2 cup semi-sweet chocolate chips (I use dairy-free chips)
1 egg
pinch of salt (optional)
Instructions:
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a bowl cream the sugar and egg.
Add the peanut butter and salt, and mix until well combined.
Stir in the chocolate chips.
Use a tablespoon to scoop the dough onto the baking sheet measuring 2 level tbsp per cookie.
Use your hands to roll each cookie into a ball and then gently press with a fork.
Bake in the preheated oven for 10 minutes. Remove from oven and let cool for a few minutes before handling.
Yield: 12 cookies
