This is a creamy, cheesy pasta recipe that is dairy-free and gluten-free! Like most of my recipes, this one is very simple. It can even be done in one pan if you have an oven safe pan.
1 1/2 lbs ground beef
3 cups uncooked gluten-free pasta noodles
1 1/2 cups tomato marinara sauce
1 can full fat coconut milk
1 tsp each of onion powder, garlic powder, and salt
1/4 tsp ground black pepper
Optional: vegan cheese shreds
Preheat oven to 400 degrees.
In an oven safe pan saute the beef with spices just until browned. It does not need to fully cook as it will continue to cook in the oven.
Add the pasta noodles, marinara sauce, and coconut milk to the pan and stir to evenly combine.
Place in the oven for 15 minutes. Remove from oven and stir, adding a 1/2 cup of water if needed. Place back in the oven for an additional 15 minutes.
Remove from oven. If adding cheese shreds, sprinkle them over the top of the casserole and place back into the oven under broil for a minute, or until the cheese melts.
To complete this meal, serve with a side of green veggies or salad.
