No Bake Chocolate Coconut Bars

These coconut bars are very easy to make with just a few simple ingredients, a food processor, and no baking!



Ingredients:

2 cups unsweetened shredded coconut

1/4 cup coconut oil, softened

1/4 cup maple syrup

1/4 cup semi-sweet chocolate chips (make sure they are dairy-free if you want dairy-free or vegan bars)


Instructions:

  1. Place all ingredients except for the chocolate chips in a food processor and mix until everything is well combined, about 1 minute.

  2. Stir in the chocolate chips.

  3. Line an 8x8 inch glass baking dish with parchment paper and firmly press the mixture into the dish.

  4. Refrigerate for at least 2 hours before cutting into 8 even bars.

  5. Store in the fridge or freezer.

Yields 8 bars
